4 fresh whole artichokes

1 cup rice, washed and drained

1 onion, finely chopped

2 Tbsp fresh parsley, finely chopped

3-4 pieces green onions, chopped

1 tsp salt

½ tsp cumin

½ tsp dried mint

¼ tsp black pepper

1 lemon’s juice

1/3 cup olive oil

Scissors are used to trim the artichoke stems and remove the leaf tips. Additionally, take off the bottom layer of the leaves. With a teaspoon, pry open the artichokes’ centres and take out the purple, hairy centre. Pour some lemon juice over the centre to keep it from browning.
Fill the artichokes with the prepared stuffing, working your way from the centre to the outer leaves. Even if there isn’t much, attempt to fill in each leaf by opening it up. Put them in a pot and add enough hot water to cover them by half. Lemon and salt should be added to the water. For around 1 to 1 1/2 hours, bring to a boil. Sometimes, spoon some water.

Whether hot or warm, serve them. Start with the outside leaves and work your way toward the centre. Each leaf should be put in between your teeth, pulled out, and the bottom portion eaten.
